京都で日本料理の本質に触れることが出来るのが【祇園にしかわ】である。ミシュランで15年連続2つ星を取得した料理人が、一皿の設計から空間のあり方に至るまで、提供するサービスのすべてに心を配っている。昼には季節の表情を活かした軽やかな構成を、夜には時間や雰囲気になじむ奥行きある味わいの流れを組み立て、それぞれの目的や過ごし方にふさわしい空間が用意されており、器の質感や音、香りといった感覚までも料理の一部と捉え、懐石を軸としながらも形式にとらわれない素晴らしい料理を堪能できる空間がここにある。
