脂の乗り、締め加減、酢の塩梅、すべてが端正で、料理人の覚悟みたいなものを感じる一貫。
最初にこれを出せるのは、相当な自信があってこそ。
椀物のクエは、澄みきった出汁の中で存在感を放つ主役級の旨み。上品なのに厚みがあり、余韻が長い。聖護院大根との相性も見事で、冬の京都を体現する一椀。
加えてお造りの平目も素晴らしかった。
包丁の入れ方が実に繊細で、口に含んだ瞬間はしっとりとした舌触り、噛み進めるほどに上品な甘みと旨みがじわりと広がる。
焼物の太刀魚はこの日のハイライト。
